I know there's plenty of great vegetarian food out there, but that doesn't stop me from feeling like vegetarians are missing out. Not because they can't eat meat, but because they don't have a huge, centerpiece dish to rival the turkey...until now.
Behold the Veggieducken, a sweet potato inside a leek inside a banana squash, with stuffing between each layer. It's perfect as the centerpiece dish at a vegetarian Thanksgiving, or as a side dish at an omnivore's house. You're welcome, America.
If you want a more thorough explanation of the Veggieducken cooking technique, this video offers more details. This is part of the Cooking Channel web series Good to Know, which I'm co-hosting with Laurie March. Check out more GTK videos here.
Note: I apologize to those of you outside the U.S. who cannot view this video, per a Cooking Channel policy. You can still find the Veggieducken recipe and photos here.
