		<description>I&#039;m reasonably certain I used a champagne yeast, so that may be why it&#039;s aged so well.  Let&#039;s talk at some point, maybe your first batch can be mead instead of beer--it&#039;s a simpler drink to make, but it&#039;s a little finickier about cleanliness.</description>

		<description>If you can&#039;t find the brown mushy plantain and all you have is the hard yellow under ripened version, I have a tip on how to cook those.  Peel and slice on a bias.  Deep fry until soft.  Smash the slices into thin pancake like discs until the inside oozes out.  Then fry AGAIN until crispy and season with salt, sugar, or better yet, both.  Great for dipping, sandwich topping, etc.</description>
