The View From Your Kitchen: Eater Tia in Philly Shares Her Cheese + 3 Omelet

Eater Tia sends this photo of an omelet she whipped up, and writes:

This is a "Cheese + 3" omelet. I know that may be considered bold, but I had to go for it. This omelette has sharp white cheddar cheese, diced ham, as well as sauteed shallots and bell pepper. You'll notice the outside is a perfect sunshine yellow with no burned spots. That comes from cooking the omelette a medium-low heat - some things just can't be rushed!

I also like my omelette medium-well in the middle. Again, I know this may be considered bold. By using this technique, an omelette can also include the best part of eggs prepared over easy or sunny side up! If I do say so myself, this was one of the top five omelettes I've ever had in my life!
