I've found that chard doesn't have enough bite to compete with the overpowering flavor of hot dogs. On the other hand, even kale can't match the power of a polish. In all cases, extra sharp cheddar is the way to go, as milder cheese is lost. The best balance I've found so far is kale, extra sharp cheddar, and a generally regular hot dog or sausage.
