What I Learned From Putting One Cubic Inch of Bacon Fat in my Mouth

Here's my latest contribution to the View From Your Laptop series... I'm down in south Florida for a few days, and I found a pretty great Cuban restaurant that I've now been to three times. Among other things they sell huge hunks of deep fried bacon (about 8" x 1" x 1"). Traditionally they're then cut up and covered with hot sauce and lemon juice, but I just decided to get one in whole stick form, with no additional seasoning. I ripped off a whole bite, and for the first time in my adult life I thought to myself, "That is more fat than I want in my mouth at one time." I did discover, though, that if you peel off the meat portion, and bring just a little fat with it, it's amazingly delicious. But don't worry, nothing will go to waste. I'm going to cook some eggs in the rest of the fat! /dan
