The Sporkful

In this week's show, listener Pat in Ohio regales us with a tale of unrequited love, cookies, and ultimate redemption. Make these cookies for someone you covet, and if your cookies are rejected, you'll know it wasn't meant to be. But if the cookies are accepted and enjoyed, it just might be the start of something special, or at least delicious. (Hey it worked for Pat, he's now happily married.) These treats are made with a chocolate chip cookie base, but instead of chocolate chips Pat uses peanut butter chips, marshmallows, and raisins. Full recipe after the jump...

1 cup butter, softened

¾ cup sugar

¾ cup paked light brown sugar

1 t. vanilla

2 eggs

2¼ cups flour

1 t. baking soda

½ t. salt

2 cup peanut butter chips

½ cup mini-marshmallows

½ cup raisins

In large bowl, cream butter, sugar, brown sugar, and vanilla until light and fluffy. Add eggs, and beat well. Combine flour, baking soda & salt, gradually add to creamed mixture. Stir in peanut butter chips, raisins and mini-marshmallows. Drop by rounded teaspoonfuls onto ungreased cookie sheet, making sure that the marshmallows are never near the top or bottom of the cookies.  Bake at 375 degrees for 8-10 minutes or until very lightly browned. Cool slightly. Remove from cookie sheet onto wire rack. Cool.
