We're re-launching our "View from Your Laptop" series with a new name: The View From Your Kitchen. Email photos of your latest kitchen creations, along with descriptions, back stories, and your name and home town, and you could be featured here on the blog!
Eater Tia sends this photo of an omelet she whipped up, and writes:
This is a "Cheese + 3" omelet. I know that may be considered bold, but I had to go for it. This omelette has sharp white cheddar cheese, diced ham, as well as sauteed shallots and bell pepper. You'll notice the outside is a perfect sunshine yellow with no burned spots. That comes from cooking the omelette a medium-low heat - some things just can't be rushed!
I also like my omelette medium-well in the middle. Again, I know this may be considered bold. By using this technique, an omelette can also include the best part of eggs prepared over easy or sunny side up! If I do say so myself, this was one of the top five omelettes I've ever had in my life!
Thanks for your email Tia. Remember that you too can contribute to the View From Your Kitchen series by emailing us here.
